Some restaurant changes happen quietly. This one matters enough to share.
Bettolino is the only Italian restaurant in the South Bay that is completely seed oil free.
About six months ago, we made the switch to rice bran oil in our fryer because we felt it was a better alternative to the more common frying oils used in restaurants. At the time, it was an intentional step toward being more thoughtful about the ingredients we use behind the scenes.
But as we continued learning, researching, and opening our newest restaurant, Wild Roots, we became even more focused on the oils we cook with. Wild Roots was built around clean, thoughtful ingredients, and that process pushed us to take an even closer look at every oil used in our kitchens.
That research led us to Fera Fruit Oil, a seed oil free frying oil made from fruit.
So we made another change.
Today, Bettolino cooks with extra virgin olive oil, avocado oil, and Fera Fruit Oil in the fryer. That means our kitchen is now completely seed oil free.
For us, this is personal.
The way we cook at Bettolino is connected to the way we cook at home. We are parents. We are a family business. We care about what goes into our kids’ meals, and we care about what goes into yours.
We know guests are paying closer attention to ingredients, oils, sourcing, and how food is prepared. We are too. That is why we have continued to look at every part of our kitchen, not just the obvious things like produce, pasta, seafood, and meat, but also the everyday cooking oils that touch so many dishes.
Rice bran oil was a step in the right direction for us, but Fera Fruit Oil is an even better fit for where Bettolino is headed. It gives us a seed oil free option that works beautifully for high heat frying while still giving our fried items the crisp, clean finish our guests love.
This does not mean our food is becoming fussy or complicated. Bettolino will always be about comforting California Italian food, handmade pastas, warm hospitality, and meals that bring people together.
It simply means we are continuing to raise our standards.
Because when we say family owned, we mean it. We feed our family this way, and we want to feed your family this way too.
