We love a good salad. There is something about the way that you can combine unique ingredients into one flavorful dish that breaks away from the traditional, boring versions.

Our Farrata is nothing short of this description – a combination of warm and cool ingredients keeping your taste buds dancing until the very last bite. Lucky for you, we’re sharing the scoop on our blog on how we make this amazing dish a flavorful part of our menu!

We debuted the Farrata on our menu in 2021, and it has been a big hit ever since. This salad not only combines flavors, but also interesting textures. The gently delicately crisp arugula is balanced with the heartiness of farro and the softness of the burrata cheese and avocado. Each bite can be a different combination of your choosing, and everyone eats it differently!

Like all of our dishes, the Farrata begins with high-quality ingredients. We source local ingredients for our recipes as often as we can, such as the arugula from Valmonte Farm & Garden and burrata from Di Stefano Cheese. Using local ingredients like these not only supports other regional and small businesses, but it also makes a big difference in the freshness of the overall dish. Because our arugula is grown just 5 miles away, none of its quality is lost in lengthy transportation or storage processes.

One of the most unique things about this dish is the warm farro-quinoa mix. We cook both farro and quinoa to their individual perfection, then combine them into a mix of tender and slightly chewy grains. While it’s finishing on the stovetop, we add in a heaping spoonful of our basil pesto, allowing the grain mix to soak up the vibrant flavors of the sauce. The nuttiness of the pesto sauce pairs perfectly with the natural, soft nutty flavors in the farro.

Two of the ingredients that aren’t as visible in this dish are what make it such a *chef’s kiss.* We toss the arugula in our housemade basil oil to enhance the flavor of the arugula and enhance the mouthfeel of this leafy green. Also topping the arugula are chopped pistachios, a well-loved ingredient in Italian cooking that adds a delightful crunch.
