Why We’ve Gone Seed Oil–Free at Bettolino (And What We’re Using Instead)

At Bettolino Kitchen, every ingredient we use starts with flavor, quality, and intention. Recently, that evaluation led us to make a thoughtful change: we’ve removed seed oils from our kitchen entirely and replaced them with higher-quality alternatives, extra virgin olive oil (EVOO) and rice bran oil.

This wasn’t a trend or a quick fix. It was the result of careful taste testing, research, and a commitment to ingredients that deliver the best results on the plate.


What We’re Using Instead

Today, our kitchen cooks with:

  • Extra virgin olive oil — for sautéing, finishing, and dressings
  • Rice bran oil — for frying and high-heat applications

Each plays a specific role and brings intentional benefits.


Why Not Seed Oils?

When heated at high temperatures, many common seed oils (like soybean, corn, and sunflower) can break down and oxidize more rapidly than more stable oils. This may lead to the formation of unwanted compounds when overheated, something we aim to minimize in cooking.

Rather than using these typical seed oils, we wanted something that:

  • Paired beautifully with the food we cook
  • Performed under heat without compromising taste
  • Aligned with our quality and ingredient standards

Rice Bran Oil: The Best Frying Partner We Found

We did taste tests with every oil we could find, from olive to avocado to more common seed oils, and the results were clear: rice bran oil delivered the best combination of taste, texture, and performance.

Here’s why we chose it:

🔸 High Heat Stability
Rice bran oil can withstand high cooking temperatures without breaking down quickly thanks to its high smoke point (around 230°C / 450°F), making it ideal for frying and sautéing while maintaining a clean taste.

🔸 Neutral, Clean Flavor
Its mild flavor doesn’t overpower food, so the ingredients, whether a crisp vegetable or a perfectly fried bite, shine through.

🔸 Naturally Rich in Antioxidants
Rice bran oil contains antioxidants like gamma-oryzanol and vitamin E, which help protect the oil during cooking and contribute to its stability.

🔸 Not a Typical “Seed Oil”
Unlike oils pressed from seeds, rice bran oil comes from the outer layer of rice grains (the bran), not the seed itself. This makes it behave differently in the pan and aligns better with our goal of using wholefood-based ingredients wherever possible.
